A green bean on the bush, the true beauty is revealed when dried and podded to reveal the stunning black and white beans within. Similar in appearance to Yin Yang, the universal symbol of balance and harmony, others also refer to these stunning bush beans as Orca Bean and most commonly Calypso Bean because of its Caribbean origins. Once favoured in the “three sisters” system (beans, corn and squash) by the Abenaki Tribe of the Champlain region in the USA. Swells to twice its size when cooked and has a lovely potato-like starchy flavour.
